Beginner Raw Recipe:
Chocolate Dip/Mousse
1 Avocado
Raw Honey (or stevia, or mesquite, or agave) to taste
Raw Cacao to taste (about 2 tablespoons)
SO easy. Whip it up in literally 2 min and have a decadent chocolate dessert. I like putting ingredients ‘to taste’ because it’s good to explore food. Taste, add, taste, add some more. Get to know your food and ingredients and how you like them.
A note on kitchen appliances - if you are just getting into eating more raw/ more healthy, good appliances do make a difference. In the picture is my mini food processor. I like having a mini one because I am way more likely to use it to make my own desserts/sauces/dressings because cleanup is so easy.

The picture above is their outdoor raw kitchen, and yes, that is a HUGE head of celery hanging from the clothesline. Like so many others that I meet, making the decision to incorporate juicing and more fresh raw fruits and vegetables has dramatically changed their lives and their health.
I truly treasure these sources of inspiration that I seem to meet everywhere. And makes me feel a little less odd :)
I was recently in Mazatlan, Mexico - where I found perfect food all around me at all times. One of those was this FRESH squeezed orange juice stand. The guy literally hand pressed oranges fresh to order.
In my mislead trying to loose weight days I had the wrong idea about juice. I now appreciate the tool that it can be in balancing blood sugar levels.
Yes, juice is high in sugar, but there are times when that is what our body needs. After all, it is these simple sugars that our brain, organs, and cells used to keep us moving.
Good times to incorporate fresh organic juice in your day:
-Wake up drink -1/2 cup first thing in the morning mixed with 1 cup of water and sea salt and trace minerals. All night long your body has been cleansing itself and your cells are sitting in this waste. This mix helps wake things up and push all that through your system. Sea salt and minerals are extra electrolytes, making sure your balanced and your body can function in a non-stressed state.
-After a good workout. During your workout you deplete your glycogen storage. It is important to replace this right away. This will help with your energy and recovery after your workout.
-A crash - or to avoid a crash. When you haven’t been able to get food in you for a few hours and you are STARVING. Drink some juice 5 min before you do eat, or slowly sip on it until you can eat. This will give your body the glycogen it needs so you can avoid sending cortisol levels (hormones that trigger fat storage) through the roof. You will also notice it will instantly lift your mood.

Getting more creative with my raw chocolate. This one has a tri-berry mix (gojis, saskatoon berries, sea buckthorn) and shizandra berry powder in the dark chocolate and vanilla bean and coconut in the white part.
Raw chocolate has become a part of my life with the unbelievable amount of antioxidants in it. Personally, I find it keeps me just even and happy throughout the day. It is great delivery system for superfoods, and because you can control what goes in it, it can be completely guilt free! I cannot eat store bought chocolate again.
It’s SO easy! I can’t wait until I get my classes going to teach it all!
How I make my Almond Milk…
I’m not keeping it a secret. Many of my friends and family have said they cannot make it taste as good as mine even though I gave them the recipe. Maybe add some extra love? :)
The basic recipe is:
1 cup soaked almonds
4 cups spring water
1 pinch sea salt
1 tablespoon lethicin (helps it to not seperate)
1 - 2 tablespoons virgin coconut oil (I have also used coconut butter)
Additions:
Vanilla powder
Dates
Cocao (I have found it easier to add after straining)
Flavored Stevia (such as vanilla, hazelnut, chocolate)
Use your imagination!
I blend all the ingredients on high in my VitaMix for at least a full minute and then strain it with nut milk bag. I used a tea cloth before the days of my nut milk bag. Must be used within 2 - 3 days.

Raw Almond Cheese Empowerment!
I call it that because of the feeling of satisfaction that comes from figuring out ways to upgrade my choices and make wonderful healthy food to feed myself, family, and friends - and the even larger satisfaction that comes from them saying “That is SO good! Can you teach me how to make that?”
I wanted to start with a basic recipe that I found online. I crusted with with and organic veggie seasoning and dehydrated to get the ‘rind’.

Juice of Life
In her book (which I highly recommend to raw food beginners), Natalia Rose refers to ‘Life Force Energy’. This juice is pure life force energy.
My basic green juice is lettuce, cucumber, celery, spinach (or whatever greens I have), lemon, apple and ginger. In the especially hydrating juice pictured above I added a can of coconut juice with the pulp (no added sugar).
My body would not let me take it away from my lips.
